Caramelized Chicken Tagine

  • 2 ‏Onions, sliced
  • 7 tbsp (divided) ‏Olive oil
  • 1 ‏Whole chicken, cut into pieces
  • 1 tsp ‏Ground turmeric
  • 1 tsp ‏Ground cumin
  • 1 tsp ‏Ground coriander
  • 1 tsp ‏Salt
  • 2-3 ‏Cinnamon sticks
  • 2 ‏Bay leaves
  • 1 bunch ‏Freshly chopped coriander
  • 2 tbsp ‏Freshly minced ginger
  • 125 ml ‏Water
  • 30 grams ‏Butter
  • 2 ‏Pears, cored and sliced
  • 2 tbsp ‏Honey
  1. Preheat an oven to 170°C.
  2. Pour 2 tbsp olive oil into a skillet and sauté the onions until soft. Place the onions in a tagine pot and on top place the chicken pieces.
  3. Mix the spices and the balance olive oil in a bowl and season the chicken pieces with the blend. Sprinkle the cinnamon and bay leaves over the chicken.
  4. Mix the coriander and ginger and pour 125 ml water over the ingredients. Cover with lid and place in the oven for about 50 minutes.
  5. Place the butter in the skillet and allow to melt. Toss in the pears and mix the honey and combine well. Let the ingredients caramelize in the butter for 5 minutes.
  6. Once the chicken is cooked through, remove the tagine from the oven and add the caramelized pears. Combine well and return to the oven for about 10 minutes.
  7. Remove from the oven and serve.
