Ingredients

  • 2 ‏Chicken thigh fillets, halved
  • 1 1/2 cups ‏Couscous
  • 4 ‏Chicken drumsticks
  • 1 tbsp ‏Olive oil
  • 1 ‏Red onion, chopped
  • 1 ‏Fresh ginger, peeled, grated
  • 2 tsp ‏Ground cumin
  • 2 ‏Garlic cloves, crushed
  • 1 tsp ‏Ground coriander
  • 1/2 tsp ‏Ground cinnamon
  • 2 cups ‏Chicken stock
  • 1 pinch ‏Saffron threads
  • 100 grams ‏Baby spinach leaves
  • 125 grams ‏Semi-dried figs, thickly sliced
  • 1/4 cup ‏Roughly chopped dry roasted hazelnuts
  • 1 1/2 cups ‏Boiling water
  • 1/3 cup ‏Fresh coriander leaves, to serve
  1. Start by preheating your oven to 350 F.
  2. Heat the oil in a baking tagine and cook the chicken brown from both sides in batches.
  3. Transfer the chicken into a plate and set aside.
  4. Heat the rest of the oil in the same pan and fry the onion for 2 minutes.
  5. Fry the garlic, cumin, ginger, cinnamon and saffron. Cook for 1 minute.
  6. Pour in the stock and bring the mixture to a boil. Add the chicken into the pan again.
  7. Bake for about 40 minutes. Now add the figs and spinach on top and again bake for 5 minutes.
  8. Cook the couscous with water for 5 minutes.
  9. Serve the tagine with the couscous.
