Ingredients

  • 1 litre ‏Water (Tomato chutney)
  • 4 cups ‏Tomatoes, chopped (Tomato chutney)
  • 1/4 cup ‏Red wine vinegar (Tomato chutney)
  • 1/4 cup ‏White sugar (Tomato chutney)
  • 1 tbsp ‏Ginger, grated (Tomato chutney)
  • 1 tsp ‏Cayenne pepper (Tomato chutney)
  • ‏Salt to taste (Tomato chutney)
  • 1/4 cup ‏Onions, chopped (Chicken tagine)
  • 3 tsp ‏Olive oil (Chicken tagine)
  • 2 pieces ‏Chicken breast cut into strips (Chicken tagine)
  • 1/2 tsp ‏Ground ginger (Chicken tagine)
  • 1/2 tsp ‏Ground cinnamon (Chicken tagine)
  • 1/2 litre ‏Chicken broth (Chicken tagine)
  • 1 ‏Zucchini, cut into strips (Chicken tagine)
  • 1 ‏Leek, cut into strips (Chicken tagine)
  1. To make the chutney, place all the ingredients in a pot or pan and boil for 10 minutes then simmer until water has reduced and thickened. Set aside.
  2. In making the chicken tagine, Sauté the onions in olive oil and add the chicken till golden for around 5 minutes.
  3. Add in your cinnamon, ginger and broth then boil and reduce to simmer for 15 minutes.
  4. Add your leeks and zucchini and cook some more for 5 minutes then season to taste.
  5. Serve the chicken with a spoonful of tomato chutney and caraway seeds.
