Ingredients

  • 1/2 piece ‏Lemon, sliced
  • 4 pieces ‏Artichokes hearts
  • 4 tbsp ‏Olive oil
  • 1 cup ‏Onions, chopped
  • 4 ‏Large garlic cloves, chopped
  • 2 tbsp ‏Lemon peel, grated
  • 3 tsp ‏Ground coriander
  • 1 tbsp ‏Paprika
  • 1 tsp ‏Ground cumin
  • 1 tsp ‏Ground ginger
  • 1 pinch ‏Cayenne pepper
  • 3 tbsp ‏Chopped fresh parsley
  • 3 tbsp ‏Chopped fresh dill
  • 3 tbsp ‏Chopped fresh mint
  • 1 kg ‏Chicken thighs
  • 500 ml ‏Chicken broth
  • 1 bulb ‏Fennel, trimmed and sliced into quarters
  • 2 ‏Large carrots, peeled and diced
  1. Season you chicken with salt and pepper then sear on a hot pan until well browned and set aside.
  2. Sauté the onions, garlic, fennel, artichoke hearts and carrots for around 4 minutes in your tagine pot.
  3. Add in all the remaining ingredients except for the chicken broth and cook for another 2 minutes then add your chicken broth.
  4. Bring chicken broth to a boil and cover with your tagine cover and place in a 350°F oven and cook for 30-45 minutes till tender.
