Ingredients

  • 2 ‏Zucchini, halved lengthways, sliced
  • 4 ‏Eggplant, sliced
  • 1 1/2 cups ‏Couscous
  • 400 grams ‏Can whole tomatoes
  • 400 grams ‏Can chickpeas, rinsed and drained
  • 1 tbsp ‏Olive oil
  • 1 ‏Onion, sliced
  • 1 ‏Red capsicum, seeded, chopped
  • 2 cups ‏Boiling water
  • 1 tbsp ‏Olive oil
  • 2 ‏Garlic cloves, crushed
  • 1 tsp ‏Ground cumin
  • ‏Salt and pepper to taste
  • 1/4 cup ‏Chopped coriander
  • ‏Chopped flat-leaf parsley, to serve
  1. In a tagine heat ½ tbsp oil and fry the onion, eggplant, zucchini and capsicum.
  2. Stir for 2 minutes and add garlic and cumin to it.
  3. Pour the tomatoes and season with salt and pepper.
  4. Bring the mixture to a simmer for 10 minutes.
  5. Add the chickpeas and coriander to it and cook for another 2 minutes.
  6. Put the couscous into a dish and pour boiling water on top. Let it cook for 5 minutes.
  7. Add 1 tbsp of olive oil and salt and pepper to it.
  8. Serve the tagine with the couscous with parsley.
