Ingredients

  • 4 ‏Carrots, cut into chunks
  • 4 small (or 3 large) ‏Parsnips, cut into chunks
  • 3 ‏Red onions, cut into wedges
  • 2 ‏Red peppers, deseeded and cut into chunks
  • 2 tbsp ‏Olive oil
  • 1 tsp ‏Ground cumin
  • 1 tsp ‏Paprika
  • 1 tsp ‏Cinnamon
  • 1 tsp ‏Mild chilli powder
  • 400 grams ‏Can chopped tomatoes
  • 2 small handfuls ‏Soft dried apricots
  • 2 tsp ‏Honey
  1. Pre-heat the oven to 200°C.
  2. Rub half of the oil over the vegetables using your hands and place the ingredients on a baking tray.
  3. Sprinkle the balance oil on the vegetables and bake for about 30 minutes until the vegetables turn light brown.
  4. Using the remaining oil, fry the spices until they sizzle and you feel the fragrance around you.
  5. Mix the apricots, honey, tomatoes and water. Allow to simmer for about 5 minutes until the liquid is reduced.
  6. Mix in the vegetables, adjust seasonings and serve.
  7. Ideal with jacket potatoes or couscous.
