Ingredients

  • 600 grams ‏Firm white fish fillets
  • 2 ‏Zucchini, diced
  • 1 ‏Red onion, chopped
  • 2 tbsp ‏Olive oil
  • 1 cup ‏Fish stock
  • 1 1/2 cups ‏Couscous
  • 1/3 cup ‏Pine nuts, toasted
  • 1 1/2 cups ‏Boiling water
  • 2 tbsp ‏Fresh coriander sprigs
  • 1/2 cup ‏Fresh parsley, chopped (Chermoula sauce)
  • 2 ‏Garlic cloves, chopped (Chermoula sauce)
  • 1/2 cup ‏Fresh coriander, chopped (Chermoula sauce)
  • 1 tbsp ‏Lemon juice (Chermoula sauce)
  • 1 ‏Eschalot, chopped (Chermoula sauce)
  • 1/4 cup ‏Olive oil (Chermoula sauce)
  • 1 ‏Red chili, chopped (Chermoula sauce)
  • 1 tsp ‏Ground cumin (Chermoula sauce)
  • 1 tsp ‏Sweet paprika (Chermoula sauce)
  • 1 tsp ‏Ground coriander (Chermoula sauce)
  • 1 tsp ‏Salt (Chermoula sauce)
  1. Get rid of the skin of the fish and cut it into 3 cm inch pieces.
  2. For the sauce, combine all the ingredients of the sauce into a blender and blend until you get a smooth mix.
  3. Marinate the fish with the sauce.
  4. In a tagine, heat the olive oil and fry the zucchini for 5 minutes.
  5. Transfer the zucchini into a plate and fry onions on the same pan.
  6. Add the zucchini into the pan again and pour the stock on top.
  7. Add the fish mix and bring it to a boil.
  8. Turn the heat to low and simmer for nearly 6 minutes.
  9. Season with salt and spices.
  10. Cook the couscous with boiled water for 5 minutes.
  11. Serve the couscous with the tagine and sprinkle some pine nuts and coriander on top.
