Ingredients

  • 1/2 tbsp ‏Olive oil
  • 1 ‏Small onion, chopped
  • 1 pinch ‏Saffron
  • 1 cup ‏Fish stock
  • 1 ‏Garlic clove, crushed
  • 1 tsp ‏Ginger, grated
  • 1/2 ‏Chili, deseeded and chopped
  • 1 tsp ‏Cumin
  • 1 tsp ‏Coriander, ground
  • 1/2 tsp ‏Cinnamon
  • 1/2 tbsp ‏Tomato paste
  • 5 ‏Cherry tomatoes, halved
  • 1 tbsp ‏Almonds, chopped
  • 1 ‏Small orange, zest and juice
  • 1/2 tbsp ‏Honey
  • 350 grams ‏Fish, any white fish
  • 1/2 cup ‏Coriander leaves
  • 1/2 cup ‏Almonds, slivered to garnish
  1. Sauté your onion in a pan for 2 minutes then place your saffron in the stock to steep. Add in the ginger, garlic and chili in the sauté pan and cook for 2 more minutes.
  2. Add in the tomato paste and the spices followed by the almonds, tomatoes, orange zest and juice, stock with saffron and honey then simmer for 10 minutes.
  3. Add in your fish and cover to cook in low heat for 3 minutes. Season to taste and garnish with your slivered almonds and coriander leaves then serve.
