Ingredients

  • 1 tbsp ‏Olive oil
  • 2 ‏Garlic cloves, chopped
  • 2 tsp ‏Ground cumin
  • 1 tsp ‏Paprika
  • 1/2 cup ‏Cilantro, chopped
  • 1/2 tsp ‏Salt
  • 1 ‏Lemon, juice and zest
  • 4 ‏Tilapia fillets
  • 1 tbsp ‏Olive oil (For the tagine)
  • 1 ‏Large onion, sliced (For the tagine)
  • 1 ‏Garlic clove, sliced (For the tagine)
  • 1 tsp ‏Cumin, ground (For the tagine)
  • 1 tsp ‏Paprika (For the tagine)
  • 2 cans ‏Whole peeled tomatoes (For the tagine)
  • 1 cup ‏Fish stock (For the tagine)
  • 1 small bottle ‏Green olives with pimiento (For the tagine)
  • 2 ‏Bell peppers, deseeded and sliced (For the tagine)
  • 200 grams ‏Potatoes, diced (For the tagine)
  1. Firstly make the chermoula by mixing together the garlic, oil, paprika, cumin, 3/4 of the cilantro and salt.
  2. Add in the lemon juice and blend in the food processor till smooth.
  3. Scoop over the chermoula on top of your tilapia fillets and coat on both sides then marinate.
  4. Sauté onions and garlic for about 4 minutes and add in your paprika and cumin to cook for 2 minutes.
  5. Add in your stock, tomatoes, lemon zest and olives. Add also the chermoula left and simmer for 10 minutes.
  6. Add in your potatoes and peppers then simmer for 10 minutes more covered until potatoes are fork tender.
  7. Add in the 1/4 of the cilantro in your tagine and arrange the fish on a platter and spoon the sauce on top and serve.
