Ingredients

  • 1 1/2 tbsp ‏Olive oil
  • 1 ‏Guinea fowl, cut into pieces just like a chicken
  • 1 ‏Onion, chopped
  • 1 ‏Garlic clove, chopped
  • 1 ‏Squash, peeled, deseeded and diced
  • 1 1/2 tsp ‏Ras-el-hanout
  • 1/2 tsp ‏Cumin
  • 1/2 tsp ‏Ground coriander
  • 1 pinch ‏Ginger
  • 1 ‏Large cinnamon stick
  • 1 tsp ‏Honey
  • ‏Pinch of saffron in 1 cup boiling water
  • 1 ‏Lemon, juice
  • 2 cups ‏Chicken stock
  • 1 can ‏Chickpeas, drained
  • 100 grams ‏Apricots, dried
  • 1/4 cup ‏Ccoriander leaves, chopped
  1. Season your guinea fowl cut-ups with salt and pepper then sear in a pan with oil till browned on all sides then set aside.
  2. Add in the onions and garlic to cook for 2 minutes. Add your spices, saffron, honey, lemon juice, chickpeas and chicken stock.
  3. Place in your seared guinea fowl in the stock with the apricots too. Cover and simmer for 1 hour until the guinea fowl and the squash are tender.
  4. Garnish with cilantro leaves and serve.
