Ingredients

  • 1/2 cup ‏Dried chickpeas, soaked overnight
  • 300 grams ‏Orange sweet potato, peeled and chopped
  • 2 tbsp ‏Olive oil
  • 1 ‏Red capsicum, chopped
  • 1 ‏Onion, sliced
  • 1 ‏Red chili, seeded and chopped
  • 4 ‏Cloves garlic, chopped
  • 200 grams ‏Green beans, trimmed, halved
  • 4 ‏Vine-ripened tomatoes, chopped
  • 2 ‏Carrots, chopped
  • ‏Vine-ripened tomatoes, chopped
  • 300 grams ‏Potatoes, peeled and chopped
  • 1 stick ‏Celery, sliced
  • ‏Natural yoghurt, to serve
  • 1/2 tsp ‏Ground black pepper (Spice mix)
  • 1 tbsp ‏Cumin seeds, roasted (Spice mix)
  • 2 tsp ‏Sweet paprika (Spice mix)
  • 1 tsp ‏Sea salt (Spice mix)
  • 1 tbsp ‏Coriander seeds, roasted (Spice mix)
  • 1/2 tsp ‏Cayenne pepper (Spice mix)
  1. Start by cooking the chickpeas with water for about 30 minutes.
  2. Once done, drain and set aside.
  3. Make the spice mix by combining all the spices into a blender and blend until smooth.
  4. In a tagine, heat the oil and fry the onion, capsicum, chili, 2 tbsp of spice mix and some water.
  5. Toss for 3 minutes and then throw in the chickpeas, vegetables, garlic and 1 cup of water.
  6. Season with salt and pepper and cover with lid.
  7. Cook for nearly 30 minutes.
  8. Serve with yoghurt.
