Ingredients

  • 3 tsp ‏Olive oil
  • 1 ‏Large onion, thinly sliced
  • 5 ‏Cloves garlic, sliced
  • 3 tsp ‏Ginger
  • 1 kg ‏Chicken thighs cut into cubes
  • 1/2 tsp ‏Ground coriander
  • 1/2 tsp ‏Ground cumin
  • 1/2 tsp ‏Ground cinnamon
  • 1 tsp ‏Salt
  • 1 tsp ‏Freshly ground pepper
  • 1/4 tsp ‏Ground cloves
  • 300 ml ‏Vegetable broth
  • 250 grams ‏Kumquats, deseeded
  • 1 can ‏Chickpeas, drained
  • 1 tbsp ‏Honey
  1. Preheat your oven to 350°F. Sauté your onions in oil for 4 minutes and add the garlic and ginger then cook for 1 more minute while stirring.
  2. Add the chicken and cook for 8 more minutes and add in the coriander, cinnamon, cumin, cloves, pepper, salt and cook for another 30 seconds.
  3. Pour in the broth, chickpeas, kumquats and honey and simmer.
  4. Cover and finish in the oven until chicken is cooked for around 1 hour then serve.
