Ingredients

  • 4 ‏Lamb shanks
  • 2 tbsp ‏Olive oil
  • 1 ‏Carrot, sliced
  • 1 ‏Rred onion, sliced
  • 6 ‏Prunes, dried
  • 1/2 tbsp ‏Honey
  • 2 tbsp ‏Lemon juice
  • 4 ‏Merguez sausages
  • 1 ‏Preserved lemon, quartered
  • 2 sprigs ‏Mint to garnish
  1. Preheat an oven to 350°C. Season lamb shanks with salt and pepper then sear in a pan with hot oil then set aside.
  2. Add in your onions, carrots and prunes to cook for 5 minutes then pour in 2 cups of water. Cover and place in the oven for 4 hours until the meat is fall off the bone tender.
  3. Add in the lemon juice, honey and other seasonings to taste.
  4. In a separate pan, fry your merguez sausages and add in the lamb shanks. Place on bowls and garnish with mint and preserved lemon.
