Ingredients

  • 250 grams ‏Green beans
  • 1 kg ‏Butternut pumpkin, peeled, cubed
  • 1 ‏Onion, cut into wedges
  • 3 ‏Zucchini, cubed
  • 1 tbsp ‏Olive oil
  • 2 ‏Garlic cloves, crushed
  • 3 tsp ‏Ground cumin
  • 1 tsp ‏Garam marsala
  • 1 tsp ‏Chili powder
  • 800 grams ‏Cans chick peas, rinsed and drained
  • 3 tsp ‏Ground coriander
  • 800 grams ‏Can diced tomatoes
  • ‏Salt and freshly ground pepper, to season
  • ‏Crusty bread, to serve
  1. In a tagine cook 1 onion and add the garlic, cumin, coriander, chili powder and garam masala.
  2. Throw in the chickpeas and the tomatoes.
  3. Add the zucchini, pumpkin and stir well. Cover with lid and cook on low heat for 4 hours.
  4. Add the beans and cook for 30 minutes. Season with salt and pepper.
  5. Serve hot with crusty bread.
