Ingredients

  • 1 cup ‏Couscous
  • 1 kg ‏Orange sweet potatoes, peeled, diced
  • 1/2 cup ‏Greek-style yoghurt
  • 400 grams ‏Can chickpeas
  • 70 ml ‏Extra virgin olive oil
  • 2 ‏Cloves garlic
  • 2 tsp ‏Ground cumin
  • 1 ‏Onion, diced
  • 2 tsp ‏Ground coriander
  • 1/2 tsp ‏Ground ginger
  • 400 grams ‏Can whole peeled tomatoes
  • 1/2 tsp ‏Mixed spice
  • 2 tsp ‏Honey
  • 1/2 tsp ‏Dried chili flakes
  • 2 ‏Long green chilies, split
  • 2 ‏Wedges preserved lemon
  • 1/4 bunch ‏Coriander
  1. In a tagine pour water that come up to 2 cm height.
  2. Cover with lid and bring to a boil. Add the potatoes and cook for 10 minutes.
  3. In a pan, heat 2 tbsp of oil and fry the onion. Season with salt.
  4. Add garlic and cook for another minute.
  5. Add the spices, flakes and toss around.
  6. Throw in the tomatoes, potatoes and chickpeas to it.
  7. Drizzle the honey and pour the water. Add the chilies and cook for 10 minutes.
  8. Cook the couscous with boiled water and make it fluffy using a fork.
  9. Season with salt and pepper and add the preserved lemon.
  10. Serve with yoghurt, coriander and couscous.
