Ingredients

  • 2 ‏Small onions, chopped
  • 5 ‏Cloves garlic, chopped
  • 1/4 cup ‏Olive oil
  • ‏Salt to taste
  • 2 tsp ‏Ginger
  • 1/2 tsp ‏Turmeric
  • 1 ‏Cinnamon stick
  • 1/3 tsp ‏Black pepper
  • 1/3 tsp ‏Cayenne pepper
  • ‏Ras-el-Hanout to taste
  • 2 tbsp ‏Chopped parsley or cilantro
  • 4 ‏Carrots, peeled and sliced into sticks
  • 250 ml ‏Water
  • 1 can ‏Chickpeas, drained
  • 1 tbsp ‏Honey
  • 1/4 cup ‏Raisins
  1. Sauté the garlic and onions in olive oil for 2 -3 minutes then add the spices, cilantro, parsley, carrots and water. Bring to a boil and simmer covered. Cook in low heat for 25 minutes until the carrots are soft.
  2. Stir in the honey, chickpeas and the raisins and continue to simmer until the chickpeas are hot enough and the sauce has reduced. Season to taste and serve hot.
